Our Story
The Honoré
Honoré's journey began in 2011 with a single sourdough starter named 'Maya'—still in use today. The founder spent five years experimenting with baking, starting with dinner rolls and eventually arriving at the ideal sourdough loaf. Fascinated by the unpredictable nature of sourdough, they explored the process in-depth, tracking over 100 variables and fermenting with wild yeasts from coffee berries, gooseberries, and bamboo rice.
Initially, the bread was shared freely among friends and family. By 2016, growing interest led to small orders and pop-up stalls, which received an enthusiastic response. In October 2017, Honoré officially began commercial operations. Today, Honoré is known for its consistent quality, rooted in a deep understanding of fermentation and a continuous desire to learn more about the living art of sourdough.
